Harvest: The grapes are hand harvest
Winemaking: In our cellar, the grapes ares destalked, sorted and vinified traditionnaly using pumping-over and punching of the cap to extract more aromas and colors. The maceration last 3 weeks.
Aging : The syrah and Mourvedre ared aged for 12 monts in puncheon barrels. The Carignan and Grenache are aged in concrete tanks for 12 months.
Bottling: Start of september
Tasting notes: On the nose we have some light aromas of vanilla followed by a jammy blach fruits notes. on the palate, we have a fresh acidity with well integrated tanins and a long finish on milk chocolates and blach fruits.
Aging Potential : 5-8 years
Suggested service temperature: 16°C
Food and wine pairing: We would suggest to drink our wine with deer filet seized in a pan and his blueberry and porto reduction sauce.
