Harvest: the grapes are hand harvest
Winemaking : in our cellar, the grapes are destalked, sorted and vinified traditionnaly using pumping-over and punching of the cap to extract more aromas and colors. The maceration last 3 weeks.
Aging: The Mourvèdre, Carignan and Grenache are aged in oak barrels for 18 months.
Bottling: End August start september
Tasting: On the nose we find some aromas of black fruits, licorice, cinnamon and leather. On the palate we have a fresh acidity with some nice and present tanins.
Aging Potential : 8-9 years
