Winemaking : In our cellar, the grapes are destalked, sorted and vinified traditionnaly using pumping-over and punching of the cap to extract more aromas and colors. The maceration last between 2 to 3 weeks. We also use a pneumatic press.
Aging process : We use new French oak barrels and the wine is aged for about 18 to 20 months
Bottling : End August
Tasting notes: We have on the nose intense aromas of dry fruits like figs, we can also smell vanilla notes, as well as roasting notes like tobacco. on the palate, we have a jammy side with a hint of licorice with silky tanins and a nice integration of the wood.
Aging Potential: + 10 years.
